    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add the dry white wine to the pot to deglaze, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Pour in the beef broth, add the thyme and bay leaf. Season with salt and black pepper. Bring to a boil, then reduce heat and let it simmer for 30 minutes.

    While the soup is simmering, slice the baguette into thick pieces and toast them until golden brown.

    Preheat your oven's broiler. Once the soup is ready, ladle it into oven-safe bowls, top each with toasted baguette slices, and sprinkle with Comté cheese.
