Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.

Prepare Pancetta
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat.

Make the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine Pasta and Sauce
Once the pasta is cooked, reserve 1 cup of the pasta water, then drain the pasta. Add the hot pasta to the skillet with pancetta. Remove from heat.

Finish the Dish
Quickly pour the egg and cheese mixture over the hot pasta, stirring vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve immediately with extra grated Parmesan and black pepper on top.
