Preparation of Mashed Potatoes

    Boil Potatoes

    Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until creamy and smooth. Set aside.

Mushroom and Sauce Preparation

    Sauté the Mushrooms

    In a large skillet, heat olive oil over medium heat. Add sliced portobello mushrooms and cook until browned, about 5-7 minutes.

    Add Sun-Dried Tomatoes and Spinach

    Stir in sun-dried tomatoes and fresh spinach. Cook until the spinach is wilted.

    Add Marsala Wine and Demi-Glace

    Pour in the Marsala wine and demi-glace. Simmer for about 10 minutes, allowing the sauce to thicken.

Serving

    Plate the Dish

    Spoon a generous serving of mashed potatoes onto each plate. Top with the sautéed mushroom mixture and sauce.
