Preparation of Mashed Potatoes

Boil Potatoes
Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Sauté the Mushrooms
In a large skillet, heat olive oil over medium heat. Add sliced portobello mushrooms and cook until browned, about 5-7 minutes.

Add Sun-Dried Tomatoes and Spinach
Stir in sun-dried tomatoes and fresh spinach. Cook until the spinach is wilted.

Add Marsala Wine and Demi-Glace
Pour in the Marsala wine and demi-glace. Simmer for about 10 minutes, allowing the sauce to thicken.
Serving

Plate the Dish
Spoon a generous serving of mashed potatoes onto each plate. Top with the sautéed mushroom mixture and sauce.
