Prepare the Broth
In a saucepan, heat the vegetable broth over low heat. Keep it warm but not boiling.

Sauté the Vegetables
In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and mushrooms, cooking until the mushrooms are softened, around 5-7 minutes.

Toast the Rice
Stir in the Arborio rice, allowing it to toast for about 2 minutes until it's lightly translucent.

Pour in the white wine and stir continuously until it's mostly absorbed by the rice.

Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Repeat this process until the rice is creamy and al dente, about 18-20 minutes.

Once the rice is cooked, remove from heat and stir in the remaining butter, grated Parmesan cheese, salt, and pepper. Mix well to combine.
