Grilled Seafood Skewers Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Skewers

Soak wooden skewers in water for at least 30 minutes to prevent burning. If using metal skewers, skip this step.

  2. 2

    Marinate the Seafood

In a large bowl, combine shrimp, scallops, mahi mahi, olive oil, garlic powder, salt, and black pepper. Toss to coat and let marinate for 15 minutes.

  3. 3

    Prepare the Vegetables

In another bowl, toss bell peppers and onions with a little olive oil, salt, and pepper.

  4. 4

    Assemble the Skewers

Thread the marinated seafood and vegetables onto the skewers, alternating between shrimp, scallops, mahi mahi, bell peppers, and onions.

  5. 5

    Grill the Skewers

Preheat the grill to medium-high heat. Grill the skewers for about 3-4 minutes on each side until the seafood is opaque and the vegetables are tender.

  6. 6

    Cook the Farro

Meanwhile, cook the farro according to package instructions. Once cooked, stir in melted butter and lemon juice.

  7. 7

    Serve

Serve the grilled seafood skewers over a bed of Italian-style farro, drizzled with additional melted butter and lemon juice. Garnish with lemon wedges.
