Crepes and Filling
Method
Instructions
- 1
Make the Crepes
In a bowl, whisk together flour, milk, eggs, and salt until smooth. Heat a non-stick skillet over medium heat and pour about 1/4 cup of batter into the skillet, swirling to coat the bottom. Cook for about 1-2 minutes until the edges lift slightly, then flip and cook for another minute. Repeat until all batter is used.
- 2
Prepare the Filling
In a mixing bowl, combine ricotta cheese, parmesan cheese, asiago cheese, and black pepper. Mix well until smooth.
- 3
Assemble the Manicotti
Take a crepe and spread a generous amount of the cheese filling along one edge. Roll it up tightly and place it seam-side down in a baking dish. Repeat with remaining crepes and filling.
- 4
Add Sauces
Pour the alfredo sauce evenly over the rolled crepes, then top with marinara sauce. Sprinkle additional parmesan cheese on top if desired.
- 5
Bake
Preheat your oven to 375°F (190°C). Bake the dish in the oven for about 20-25 minutes until heated through and bubbly.
- 6
Garnish and Serve
Remove from the oven, garnish with fresh basil, and serve hot.
