    Clean the Clams

    In a large bowl, soak the clams in cold water for at least 30 minutes to remove any sand or grit. Rinse thoroughly and set aside.

    Sauté Aromatics

    In a large pot or deep skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.

    Add Garlic and Scallions

    Stir in the minced garlic and chopped scallions, cooking for another 2-3 minutes until fragrant.

    Deglaze with Sherry

    Pour in the sherry wine, scraping up any bits stuck to the bottom of the pot. Bring to a simmer.

    Add Clams and Herbs

    Add the cleaned clams, parsley, basil, red pepper flakes, salt, and black pepper. Cover the pot and cook for about 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

    Serve

    Serve the clams immediately, spooning the broth over them. Garnish with additional fresh herbs if desired.
