Prepare the Crust
Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until set and lightly golden. Remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add granulated sugar, continuing to beat until well combined. Mix in the sour cream and vanilla extract until smooth. Add the eggs one at a time, mixing on low speed just until combined after each addition. Do not overmix.

Bake the Cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour to cool gradually.

Chill and Serve
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Once chilled, run a knife around the edges before releasing the springform pan. Slice and serve as desired.
