    Prepare the Shrimp

    In a large bowl, toss the shrimp with Cajun seasoning, salt, and black pepper until evenly coated.

    Cook the Tortellini

    In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes per side, or until they are cooked through and blackened. Remove shrimp from the skillet and set aside.

    Make the Sauce

    In the same skillet, add the cherry tomatoes and scallions. Sauté for 2-3 minutes until the tomatoes begin to soften. Reduce the heat to medium and pour in the heavy cream, stirring to combine.

    Add the cooked tortellini and shrimp back into the skillet. Stir in the Parmesan and Asiago cheeses until melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.
