Cooking Instructions

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain and set aside.

  2. 2

    Sauté the Aromatics

In a large skillet, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until the onions are translucent.

  3. 3

    Cook the Seafood

Add the shrimp and scallops to the skillet. Cook for about 4-5 minutes, stirring occasionally, until the shrimp are pink and the scallops are opaque.

  4. 4

    Add Wine and Lemon Juice

Pour in the white wine and lemon juice, and let it simmer for about 2-3 minutes until the alcohol evaporates slightly.

  5. 5

    Combine Pasta and Cheese

Add the cooked rigatoni to the skillet, along with the cheddar and parmesan cheese. Stir until the cheese is melted and evenly coats the pasta and seafood.

  6. 6

    Season and Serve

Season with salt, pepper, and chopped parsley to taste. Serve hot and enjoy!
