    Prepare the Ingredients

    Wash the fresh spinach thoroughly and chop it roughly. Dice the bacon into small pieces.

    Cook the Bacon

    In a frying pan over medium heat, cook the diced bacon until crispy. Remove and set aside, leaving the drippings in the pan.

    Sauté the Spinach

    In the same pan with bacon drippings, add the chopped spinach. Sauté for about 2-3 minutes until wilted. Remove from heat and let cool.

    Make the Roux

    In a separate saucepan, melt the butter over low heat. Add the flour and whisk for about 2 minutes until it forms a paste. Gradually whisk in the milk, continuing to stir until the mixture thickens into a béchamel sauce.

    Combine Ingredients

    Remove the béchamel from the heat and stir in the sautéed spinach, crispy bacon, grated cheese, salt, black pepper, and nutmeg. Allow to cool slightly before adding the egg yolks.

    Beat the Egg Whites

    In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the spinach mixture, being careful not to deflate the whites.

Baking

    Preheat your oven to 180°C (350°F).

    Prepare the Dish

    Butter a soufflé dish and pour the soufflé mixture into it, filling it up to three-quarters full.

    Bake the Soufflé

    Place the soufflé dish in the preheated oven and bake for 25-30 minutes, or until the soufflé is puffed and golden brown on top.

Serving

    Once baked, remove the soufflé from the oven. Garnish with freshly chopped parsley and serve immediately.
