Bagel Dough

Boiling Solution

Method

Making the Dough

  1. 1

    Activate the Yeast

In a small bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until foamy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine the flour and salt. Once the yeast mixture is foamy, add it to the flour mixture. Stir until combined.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Incorporate the blueberries gently into the dough.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Boiling

  1. 5

    Shape the Bagels

Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center with your finger. Stretch the hole to form a bagel shape.

  2. 6

    Prepare Boiling Solution

In a large pot, bring the water, honey, and baking soda to a gentle boil.

  3. 7

    Boil the Bagels

Carefully drop the bagels into the boiling water, a few at a time. Boil for about 1-2 minutes on each side, then remove and place on a baking sheet.

Baking

  1. 8

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 9

    Apply Toppings

Brush each boiled bagel with the egg wash and sprinkle with coarse sea salt.

  3. 10

    Bake the Bagels

Place the bagels in the preheated oven and bake for 20-25 minutes or until golden brown.

  4. 11

    Cool and Serve

Once baked, remove the bagels from the oven and let them cool on a wire rack before serving.
