Preparing the Dough

1. Activate the Yeast

In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.

2. Mix the Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

3. Knead the Dough

Mix until a rough dough forms, then transfer to a floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic.

4. First Rise

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

5. Shape the Bagels

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center with your finger to shape into bagels.

6. Second Rise

Place the shaped bagels on a parchment-lined baking sheet. Cover with a damp cloth and let them rise for another 30 minutes.

7. Boil the Bagels

In a large pot, bring water to a boil. Carefully drop the bagels into the boiling water (2-3 at a time) and boil for about 1 minute on each side. Remove with a slotted spoon and return to the baking sheet.
