Preparation Steps

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Toss the fingerling potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.

    Prepare the Broccoli Rabe

    While the potatoes are roasting, bring a pot of salted water to a boil. Add the broccoli rabe and blanch for 2-3 minutes. Drain and immediately transfer to ice water to stop the cooking. After a few minutes, drain again and set aside.

    Prepare the Veal Chops

    Place a slice of prosciutto and 2 sage leaves on each veal chop. Use toothpicks to secure them in place. Season with salt and pepper.

    Cook the Veal Chops

    In a large skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the veal chops and cook for about 4-5 minutes on each side until browned and cooked through. Remove from the skillet and let them rest.

    Sauté the Broccoli Rabe

    In the same skillet, add the minced garlic and sauté for 1 minute. Then add the blanched broccoli rabe and sauté for an additional 3-4 minutes. Season with lemon juice, salt, and pepper.

    Assemble the Dish

    Serve the veal chops on a plate, topped with sautéed broccoli rabe, alongside the roasted fingerling potatoes.
