    Prepare the Cauliflower

    Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and place them in a large bowl. Drizzle with 2 tablespoons of olive oil, and season with salt, black pepper, and garlic powder. Toss to coat evenly.

    Roast the Cauliflower

    Spread the cauliflower florets on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden and tender, stirring halfway through.

    Caramelize the Onions

    While the cauliflower is roasting, slice the onions thinly. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes.

    Toast the Pine Nuts

    In a separate dry skillet, toast the pine nuts over medium heat until golden and fragrant, about 3-5 minutes. Keep an eye on them to avoid burning.

    Combine Ingredients

    In a large serving bowl, combine the roasted cauliflower, caramelized onions, toasted pine nuts, golden raisins, and breadcrumbs. Toss gently to mix all the ingredients together.

    If desired, sprinkle with Parmesan cheese before serving. Enjoy your CAVOLFIORI warm or at room temperature.
