    Prepare the Ingredients

    Rinse the fresh fish fillets under cold water and pat them dry with a paper towel. Halve the Piennolo tomatoes if they are large. Peel and slice the garlic.

    Sauté Garlic

    In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until it turns golden, about 1-2 minutes.

    Cook Tomatoes

    Add the Piennolo tomatoes to the skillet and season with sea salt and black pepper. Cook for about 5 minutes, allowing the tomatoes to soften and release their juices.

    Add Fish

    Gently place the fish fillets into the skillet, skin-side down. Pour in 1 cup of water and add the fresh basil leaves.

    Simmer

    Cover the skillet and let it simmer for about 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.

    Remove the skillet from the heat and serve the fish immediately, topped with the cooked tomatoes and basil.
