Prepare the Dumplings

Make Dough
Peel the potatoes and pass them through a potato ricer into a large bowl. Add flour, egg, and salt. Mix until a soft dough forms. If too sticky, add a bit more flour.

Shape Gnocchi
On a floured surface, divide the dough into sections and roll each section into a rope about 1 cm thick. Cut into 2 cm pieces and shape each piece with a fork.

Combine and Bake
Preheat the oven to 200°C (400°F). In a clay baking dish, combine gnocchi with the tomato sauce. Top with slices of buffalo mozzarella and sprinkle with grated Parmesan. Bake for 20-25 minutes until cheese is bubbly and golden.

Remove from the oven, garnish with fresh basil leaves, and serve hot.
