Directions

  1. 1

    Prepare the Clams

Rinse the clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.

  2. 2

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add minced garlic and diced shallots, sauté until softened and fragrant, about 3-4 minutes.

  3. 3

    Add Wine and Broth

Pour in the white wine and vegetable broth. Bring the mixture to a simmer.

  4. 4

    Cook the Clams

Add the cleaned clams to the pot. Cover and cook for about 5-7 minutes, or until the clams have opened up. Discard any clams that remain closed.

  5. 5

    Season the Broth

Stir in chopped parsley, red pepper flakes, salt, and black pepper to taste.

  6. 6

    Prepare the Bread

While the clams are cooking, grill the rustic bread slices until golden and crispy.

  7. 7

    Serve

Ladle the clam zuppa into bowls and serve with grilled rustic bread on the side.
