    Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. This helps them cook evenly. Pat the steaks dry with paper towels, then generously season both sides with salt and black pepper.

    Heat the Pan

    In a large skillet or cast iron pan, heat the olive oil over medium-high heat until shimmering but not smoking.

    Sear the Steak

    Carefully place the seasoned ribeye steaks in the hot pan. Sear for about 4-5 minutes on one side, without moving them, until a nice crust forms.

    Flip the Steak

    Using tongs, flip the steaks and add the garlic cloves and rosemary sprigs to the pan. Cook for an additional 3-4 minutes for medium-rare, or until your desired doneness is reached.

    Baste the Steak

    Tilt the pan slightly and use a spoon to baste the steaks with the hot oil, garlic, and rosemary for extra flavor.
