Preparation
- 1
Season the Steak
Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. This helps them cook evenly. Pat the steaks dry with paper towels, then generously season both sides with salt and black pepper.
Cooking
- 2
Heat the Pan
In a large skillet or cast iron pan, heat the olive oil over medium-high heat until shimmering but not smoking.
- 3
Sear the Steak
Carefully place the seasoned ribeye steaks in the hot pan. Sear for about 4-5 minutes on one side, without moving them, until a nice crust forms.
- 4
Flip the Steak
Using tongs, flip the steaks and add the garlic cloves and rosemary sprigs to the pan. Cook for an additional 3-4 minutes for medium-rare, or until your desired doneness is reached.

- 6
Rest the Steak
Once cooked, transfer the steaks to a cutting board or plate and let them rest for 5-10 minutes to allow the juices to redistribute.
Serving
- 7
Slice and Serve
After resting, slice the ribeye against the grain and serve with your favorite sides. Enjoy your juicy ribeye steak!
