Preparing the Souvlaki

Marinate the Chicken

In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken breast cut into bite-sized pieces and mix well. Cover and refrigerate for at least 1 hour or overnight for best flavor.

Prepare Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Assemble the Skewers

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Grill the Souvlaki

Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Preparing the Tzatziki

Grate the Cucumber

Grate the cucumber and place it in a clean kitchen towel. Squeeze out excess moisture to prevent the tzatziki from being watery.

Mix Ingredients

In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, fresh dill, salt, and black pepper. Mix until well combined.

Chill

Cover and refrigerate the tzatziki for at least 30 minutes to allow flavors to meld.
