Lemon Rice

1. Prepare the Rice

Rinse 1 cup of basmati rice under cold water until the water runs clear.

2. Cook the Rice

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until water is absorbed.

3. Flavor the Rice

Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Stir in 2 tablespoons of lemon juice, 1 teaspoon of turmeric powder, 1 teaspoon of salt, and 1 tablespoon of olive oil.

Mixed Greens

4. Prepare the Greens

In a large bowl, add 4 cups of mixed salad greens.

5. Dress the Greens

Drizzle 1 tablespoon of olive oil and 1 tablespoon of lemon juice over the greens. Season with salt and pepper to taste.

6. Toss the Salad

Wash and slice the 2 bell peppers into strips.

8. Sauté the Peppers

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers, season with salt to taste, and sauté for about 5-7 minutes until they are tender.
