For the Lamb Marinade

Method

Marinating the Lamb

    Prepare the Marinade

    In a large bowl, combine the ground lamb, minced garlic, dried oregano, ground cumin, salt, black pepper, olive oil, and lemon juice. Mix well until all ingredients are thoroughly combined.

    Marinate the Lamb

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight to allow the flavors to meld.

Cooking the Lamb

    Preheat the Grill or Skillet

    Heat a grill or a large skillet over medium-high heat. If using a skillet, add a little olive oil to prevent sticking.

    Cook the Lamb

    Remove the marinated lamb from the refrigerator. Shape the lamb mixture into burger-sized patties or meatballs. Grill or pan-fry the patties for about 5-7 minutes on each side or until cooked through and browned.

    Rest the Meat

    Once cooked, remove the lamb from the heat and let it rest for 5 minutes before slicing.

Assembling the Gyro

    Prepare the Pita

    Warm the pita bread on the grill or in the oven for a few minutes until soft and pliable.

    Add the Fillings

    Place a few slices of cooked lamb in the center of each pita. Top with sliced cucumber, diced tomato, thinly sliced red onion, and a sprinkle of chopped parsley.

    Finish with Tzatziki

    Drizzle a generous amount of tzatziki sauce over the filling, then fold the pita over to form a wrap.
