Method

Marinating the Meat

    Prepare the Marinade

    In a large bowl, combine olive oil, minced garlic, dried oregano, paprika, salt, black pepper, and lemon juice. Mix well.

    Marinate the Meat

    Add the pork shoulder or chicken thighs to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Cooking the Meat

    Preheat the Grill or Oven

    Preheat your grill to medium-high heat or your oven to 400°F (200°C).

    Cook the Meat

    Remove the meat from the marinade and discard the marinade. Grill or roast the meat for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest for 5 minutes before slicing.

Preparing the Salad and Pita

    Prepare the Salad

    In a large bowl, combine diced cucumber, diced tomatoes, sliced red onion, chopped parsley, and crumbled feta cheese. Toss gently to mix.

    Warm the Pita

    Warm the pita bread on the grill for about 1-2 minutes on each side, or until soft and pliable.

Assembling the Gyros

    Slice the Meat

    Thinly slice the cooked meat and set aside.

    To assemble, take a warm pita, add a generous amount of sliced meat, top with the salad mixture, and drizzle with tzatziki sauce. Fold the pita and serve immediately.
