Method
Preparing the Meat
Marinate the Meat
In a bowl, combine the olive oil, minced garlic, dried oregano, ground cumin, salt, and black pepper. Add the boneless chicken thighs or lamb and coat well. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Grill the Meat
Preheat a grill or grill pan over medium-high heat. Remove the meat from the marinade and grill for about 5-7 minutes per side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes before slicing.
Making the Tzatziki Sauce
Prepare the Cucumber
Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
Assembling the Gyro
Prepare the Vegetables
Chop the tomato and thinly slice the red onion. Rinse and dry the lettuce.
Assemble the Gyro
Warm the pita bread on the grill or in a dry skillet for a minute. Place sliced grilled meat in the center of each pita, and top with tomato, onion, lettuce, and a generous amount of tzatziki sauce. Fold the pita in half to enclose the fillings.
