Coffee Preparation

Combine Ingredients

In a small coffee pot (briki), add the finely ground Greek coffee, cold water, and sugar.

Heat the Mixture

Place the briki on low heat. Stir the mixture slowly until the coffee and sugar dissolve completely.

Bring to a Boil

Continue heating until the coffee starts to foam and bubble but do not let it boil over. Remove from heat just before it boils.

Repeat Heating

Return the briki to the heat and allow the coffee to foam up again. Remove from heat and repeat this process two more times to achieve a rich crema.

Let it Settle

Once you have foamed the coffee three times, remove it from the heat and let it sit for about 30 seconds to allow the grounds to settle.

Serving the Coffee

Pour the Coffee

Carefully pour the coffee into a small cup, leaving the grounds at the bottom of the briki.

Add Optional Ingredients

If desired, add a pinch of cardamom or a splash of milk or cream to taste.
