Preparation of Chicken Souvlaki

Prepare the Marinade
In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.

Marinate the Chicken
Cut the chicken breast into 1-inch cubes and add to the marinade. Mix well to ensure all chicken pieces are coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Skewer the Chicken
Soak wooden skewers in water for about 30 minutes. Once marinated, thread the chicken pieces onto the skewers.

Cook the Rice
In a saucepan, combine long-grain rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and water is absorbed.
Preparing the Salad

Prepare the Vegetables
Dice the cucumber and tomatoes, and thinly slice the red onion. In a mixing bowl, combine the vegetables.

Add feta cheese, olive oil, red wine vinegar, salt, and black pepper to the bowl with vegetables. Toss gently to combine.
