Method
Preparation of the Nut Filling

Chop the Nuts
In a food processor, combine the walnuts and pistachios. Pulse until coarsely chopped but not finely ground. Transfer to a bowl.

Add Sugar and Cinnamon
To the chopped nuts, add the ground cinnamon and granulated sugar. Mix well and set aside.
Preparing the Filo Pastry

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let cool slightly.

Prepare the Baking Dish
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with some melted butter.

Add Nut Filling
Spread a thin layer of the nut mixture evenly over the buttered filo sheets.

Continue Layering
Add 3-4 more buttered filo sheets, then another layer of the nut mixture. Continue this process until all the nuts are used, finishing with a final layer of 8-10 buttered filo sheets on top.
Baking the Baklava

Cut the Baklava
Using a sharp knife, cut the baklava into diamond or square shapes ensuring you cut through all layers.

Bake the Baklava
Bake in the preheated oven for about 45-50 minutes or until golden brown and crisp.
Making the Honey Syrup

Combine Ingredients
In a saucepan, combine the granulated sugar, water, honey, and vanilla extract. Bring to a boil over medium heat.

Simmer the Syrup
Reduce the heat and let it simmer for about 10 minutes. Remove from heat and let cool slightly.
Finishing Touches

Pour Syrup Over Baklava
Once the baklava is done baking, remove it from the oven and immediately pour the warm honey syrup over it, ensuring all pieces are covered.

Cool and Serve
Allow the baklava to cool completely before serving. Cut along the lines again and enjoy.
