Preparation and Cooking

    Marinate the Chicken

    In a large bowl, combine chicken wings, oyster sauce, fish sauce. Mix well and let marinate for at least 30 minutes.

    Prepare the Coating

    In a separate bowl, add cornstarch. Dredge the marinated chicken wings in the cornstarch until evenly coated.

    Fry the Chicken Wings

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the coated chicken wings and fry for 8-10 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Crispy Shallots and Chilies

    In the same oil, fry the sliced shallots until golden and crispy. Remove and drain on paper towels. Next, fry the dried red chilies until crispy. Set aside.

    Prepare the Tamarind Sauce

    In a small saucepan, combine tamarind paste, brown sugar, and water. Cook over medium heat until the sugar dissolves and the sauce thickens slightly.

    Assembly

    Toss the fried chicken wings with the sauce until well coated. Top with crispy shallots, fried magrud lime leaves, and crispy chilies. Serve with lime wedges on the side.
