Prepare Shrimp Chips

Blend the Shrimp
In a food processor, blend the shrimp until smooth.

Combine Ingredients
In a mixing bowl, combine the blended shrimp, tapioca flour, water, salt, and black pepper. Mix until a dough forms.

Shape the Chips
Spread the dough onto a parchment-lined baking sheet, about 1/4 inch thick. Cut into desired chip shapes.

Dry the Chips
Leave the shaped chips to dry for at least 2 hours or until they are firm to the touch.

Fry the Chips
Heat vegetable oil in a deep pan over medium heat. Fry the dried chips in batches until they puff up and turn golden brown. Remove and drain on paper towels.
Prepare Tamarind Dip

Mix Ingredients
In a small saucepan, combine tamarind paste, water, brown sugar, soy sauce, chili flakes, and lime juice.

Cook the Dip
Heat the mixture over medium heat, stirring until the sugar dissolves and the sauce thickens slightly. Remove from heat and let cool.
