Method
Grabong Squash Fritters

Prepare the Batter
Grate the Grabong squash and mix it with rice flour, water, and salt to form a batter.

Fry the Fritters
Heat oil in a deep pan and drop spoonfuls of the batter into the hot oil. Fry until golden brown. Drain on paper towels.
Moo Ping Barbecue Pork Skewers

Skewer and Grill
Thread the marinated pork onto skewers and grill over medium heat until cooked through, about 10-12 minutes.
Northern Laab Salad

Cook the Meat
Cook the ground chicken or pork in a pan over medium heat until browned and cooked through.

Mix the Salad
In a bowl, combine the cooked meat, lime juice, fish sauce, shallots, mint, cilantro, and chili flakes. Toss well.
Northern Thai Sausage

Prepare the Sausage Filling
In a bowl, mix ground pork, minced garlic, red curry paste, and minced coriander root.

Stuff the Sausage
Stuff the sausage filling into the pork casings and twist into links.

Tomato-Pork Relish

Cook the Relish
In a pan, sauté minced garlic, then add ground pork and cook until browned. Add diced tomatoes, fish sauce, and chili powder. Simmer until thickened.
Sticky Rice

Prepare the Sticky Rice
Rinse the sticky rice under cold water until the water runs clear. Soak in water for at least 4 hours. Drain and steam for about 30 minutes.
