Preparation

    Marinate the Shrimp

    In a bowl, combine the black tiger shrimp, minced garlic, oyster sauce, salt, and black pepper. Mix well and let it marinate for 30 minutes.

    Prepare Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten egg, and one with breadcrumbs.

Frying Shrimp

    Bread the Shrimp

    Take each marinated shrimp, coat it in flour, dip it in beaten egg, and finally coat it with breadcrumbs. Repeat with all shrimp.

    Heat Oil

    In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Tamarind Sauce

    Make the Sauce

    In a small saucepan, mix together tamarind paste, water, sugar, soy sauce, and chili flakes. Heat over medium heat until the sugar dissolves. Simmer for 5 minutes and remove from heat.

Serving

    Plate the fried garlic shrimp and serve with the sweet tamarind sauce on the side.
