Preparation Steps
1. Cook Jasmine Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and 4 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
2. Prepare Green Curry Sauce
In a saucepan, heat a small amount of vegetable oil over medium heat. Add the green curry paste and sauté for 2 minutes until fragrant. Pour in the coconut milk and oyster sauce, stirring well. Bring to a simmer and cook for 5 minutes. Stir in fresh basil leaves and season with salt and pepper to taste. Remove from heat.
3. Fry Basa Fillets
Season the basa fillets with salt and black pepper. In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the fillets and fry for about 3-4 minutes on each side until golden brown and crispy. Remove from the skillet and drain on paper towels.
4. Serve
Plate the steamed jasmine rice, place the crispy basa fillet on top, and generously pour the green curry sauce over the fish. Garnish with lime wedges and additional basil leaves if desired.
