Prepare the Soup

    Cook the Pork Ribs

    In a large pot, add the pork ribs and cover with water. Bring to a boil and cook for about 30 minutes, skimming off any foam that rises to the surface.

    Add Ingredients

    Add chopped tomatoes, minced garlic, sliced shallots, shrimp paste, chicken broth, fish sauce, sugar, and lime juice to the pot. Stir well and let it simmer for another 30 minutes until the pork is tender.

    Season the Soup

    Taste the soup and adjust seasoning with more fish sauce or lime juice if desired.

Prepare the Noodles and Serve

    Cook the Noodles

    In a separate pot, bring water to a boil and cook the rice vermicelli noodles according to package instructions. Drain and set aside.

    Serve the Dish

    In a serving bowl, place a portion of vermicelli noodles, ladle the hot soup over the noodles, and top with homemade pork rinds. Garnish with fresh lime wedges and cilantro.
