Method

Preparation

  1. 1

    Prepare the Rice Noodles

Soak the rice noodles in hot water for about 30 minutes or until softened. Drain and set aside.

  2. 2

    Make the Sauce

In a bowl, mix tamarind paste, palm sugar, oyster sauce, soy sauce, and chili powder. Adjust the seasoning to your preferred spice level.

Cooking

  1. 3

    Stir-fry the Tofu

In a large wok or frying pan, heat some oil over medium-high heat. Add cubed tofu and stir-fry until golden brown. Remove tofu from the pan and set aside.

  2. 4

    Cook the Vegetables

In the same pan, add the chives and shredded cabbage, stir-frying for 2-3 minutes until softened.

  3. 5

    Add Noodles and Sauce

Add the softened rice noodles to the pan along with the sauce. Stir well to combine and heat through for about 2-3 minutes.

  4. 6

    Finish with Beansprouts and Eggs

Push the noodles to one side of the pan. Crack the eggs into the empty side and scramble until cooked. Mix everything together, then add the beansprouts and cooked tofu. Stir-fry for another minute.

  5. 7

    Serve

Serve hot, garnished with chopped roasted peanuts and lime wedges on the side.
