    Prepare the Ingredients

    Chop the sweet onions, dice the tomatoes, slice the green olives, and chop the fresh mint.

    Cook the Onions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sweet onions and sauté for about 5 minutes until they are translucent.

    Add the Other Ingredients

    Stir in the diced tomatoes, green olives, capers, and chopped mint. Cook for another 5-7 minutes until the tomatoes soften.

    Cook the Salmon

    In a separate pan, heat the remaining 2 tablespoons of olive oil over medium-high heat. Season the salmon fillets with salt and black pepper. Place them in the pan and cook for about 4-5 minutes on each side, or until cooked through.

    Once the salmon is cooked, place it on a serving plate and top with the sautéed onion and tomato mixture. Serve warm.
