    Prepare the Eggplant

    Slice the eggplants into 1/2 inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

    Bread the Eggplant

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each eggplant slice in flour, dip it in the egg, and coat it with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices until golden brown on both sides, about 3-4 minutes per side. Place them on a paper towel to drain excess oil.

    Assemble the Dish

    Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of tomato sauce, then layer fried eggplant slices, sprinkle with parmesan and mozzarella cheese, and repeat until all ingredients are used, finishing with cheese on top.

    Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

    Let it cool for a few minutes before serving. Garnish with fresh basil.
