1. Marinate the Lamb Chops

In a bowl, combine chopped rosemary, thyme, minced garlic, olive oil, salt, and black pepper. Add lamb chops and coat them well with the marinade. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

2. Prepare the Sauce

In a small saucepan, combine the green peppercorns and raspberry vinegar. Heat over low heat for about 5 minutes, allowing the flavors to meld. Remove from heat and set aside.

3. Grill the Lamb Chops

Preheat the grill to medium-high heat. Remove lamb chops from the marinade and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness.

4. Serve

On a plate, create a bed of fresh arugula. Top with the grilled lamb chops and drizzle with the raspberry vinegar sauce. Serve immediately.
