Prepare Tea Base
Boil Water
In a small saucepan, bring 2 cups of water to a boil over medium-high heat.
Add Tea and Lemongrass
Once boiling, add the black tea bags and the bruised lemongrass stalk if using. Turn off the heat and let it steep for 5–7 minutes.
Remove Tea Bags and Lemongrass
After steeping, remove the tea bags and lemongrass from the pot. Discard them.
Flavoring and Sweetening
Add Lemon Juice
Stir in the fresh lemon juice to the brewed tea.
Sweeten the Tea
Add granulated sugar and honey to the hot tea. Stir until fully dissolved.
Cool the Tea
Allow the tea to cool down to room temperature, then place in the refrigerator to chill for at least 20 minutes.
Serving
Prepare Glasses
Fill two glasses with ice cubes.
Pour and Garnish
Pour the chilled Thai Lemon Tea over the ice. Garnish each glass with a lemon slice and a couple of mint leaves if desired. Serve immediately.
