For the Chicken Satay

For the Peanut Sauce

Method

Preparing the Chicken Satay

1

Marinate the Chicken

In a mixing bowl, combine coconut milk, soy sauce, brown sugar, minced garlic, minced ginger, lime juice, turmeric powder, and salt. Whisk until well combined.

2

Cut the Chicken

Slice the boneless chicken breast into thin strips, about 1 inch wide.

3

Combine Chicken with Marinade

Add the chicken strips to the marinade and ensure all pieces are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

4

Soak Skewers (if wooden)

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Grilling the Chicken Satay

5

Prepare the Grill

Preheat your grill or grill pan over medium-high heat.

6

Skewer the Chicken

Thread the marinated chicken strips onto the skewers, leaving a little space between each piece.

7

Grill the Chicken

Place the skewers on the grill and cook for about 4-5 minutes on each side or until the chicken is cooked through and has nice grill marks.

8

Rest the Skewers

Remove skewers from the grill and let them rest for a few minutes before serving.

Making the Peanut Sauce

9

Combine Ingredients

In a saucepan, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and chili paste (if using).

10

Heat the Sauce

Place over medium heat and stir continuously until the sauce is smooth and heated through.

11

Adjust Seasoning

Taste the sauce and adjust seasoning with more chili paste if desired.

Serving

12

Serve the Satay

Serve the chicken satay skewers with the warm peanut sauce for dipping. Enjoy!
