Satay Sauce
For Grilling
Method
Marinade Preparation
Prepare the Marinade
In a bowl, combine soy sauce, peanut butter, honey, minced garlic, grated ginger, lime juice, chili powder, and salt. Mix well until smooth.
Marinate the Chicken
Cut the boneless chicken thighs into bite-sized pieces and add them to the marinade. Toss to coat the chicken pieces evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Satay Sauce Preparation
Make the Satay Sauce
In a saucepan over medium heat, combine coconut milk, peanut butter, soy sauce, lime juice, brown sugar, minced garlic, chili powder, and salt. Stir continuously until the mixture is well combined and heated through. Remove from heat and set aside.
Grilling the Chicken
Prepare Skewers
Soak the wooden skewers in water for at least 30 minutes to prevent burning while grilling.
Skewer the Chicken
Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.
Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
Serving
Serve the Satay
Remove the skewers from the grill and serve hot with the prepared satay sauce for dipping.
