Prepare the Tripe
Rinse the beef tripe under cold water, then place it in a large pot. Cover with water and bring to a boil. Let it boil for about 10 minutes, then drain and rinse again. This will help remove any impurities.

Cook the Tripe
Return the tripe to the pot and add the beef broth, garlic cloves (smashed), dried oregano, and ground cumin. Bring to a boil, then reduce to a simmer. Cover and cook for about 2 hours, or until the tripe is tender.

Add Hominy
Once the tripe is tender, add the hominy to the pot. If using dried hominy, ensure it has been pre-cooked according to package instructions. Simmer for an additional 30 minutes.

Season to Taste
Taste the soup and season with salt and pepper as needed. Remove from heat.

Serve
Ladle the menudo into bowls and serve with chopped cilantro, diced onions, lime wedges, and warm tortillas on the side.
