    Prepare the Ingredients

    Chop the tomatoes, onion, and jalapeno pepper into small pieces. Peel and dice the potatoes.

    Cook the Potatoes

    In a skillet, heat 1 tablespoon of cooking oil over medium heat. Add the diced potatoes and fry until crispy and golden brown, about 10-12 minutes. Remove from the skillet and set aside.

    Prepare the Beans

    In the same skillet, add the black beans and heat until warmed through. Season with salt and pepper to taste.

    Scramble the Eggs

    In a bowl, whisk the eggs with salt and pepper. In the skillet, add the remaining tablespoon of cooking oil. Sauté the onion, tomatoes, and jalapeno until soft, about 5 minutes. Pour in the whisked eggs and scramble until cooked through and fluffy.

    In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.
