Prepare the Ingredients

Dice the potatoes into small cubes. Chop the bacon and set aside.

Cook the Potatoes

In a skillet, heat olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and tender, about 10-15 minutes. Remove from skillet and set aside.

Cook the Bacon and Chorizo

In the same skillet, add the chopped bacon and cook until crispy. Drain excess grease if necessary. Add the chorizo and cook for another 5 minutes until browned.

Scramble the Eggs

In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the bacon and chorizo, and cook, stirring gently, until the eggs are scrambled and cooked through.

Combine the Filling

Add the cooked potatoes and black beans into the skillet with the eggs, bacon, and chorizo. Stir to combine and heat through.

Assemble the Burritos

Lay a tortilla flat, place a generous portion of the filling in the center, and sprinkle with shredded cheddar cheese. Fold the sides of the tortilla over the filling and roll it up tightly.

Place the burritos seam-side down on a skillet over medium heat to crisp the outside for about 2-3 minutes. Cut in half and serve warm.
