Prepare the Rice

In a pot, cook the rice according to package instructions. Set aside once done.

Sauté Aromatics

In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

Add Vegetables

Stir in the diced tomatoes and cook for another 3-4 minutes until they soften.

Make the Broth

Pour in the fish stock (or water), and bring to a boil. Season with salt and black pepper.

Add Seafood

Once boiling, add the octopus, shrimp, mussels, and clams. Reduce heat and simmer for about 10-15 minutes, or until the seafood is cooked through.

Add Fish

Add the fish fillets and cook for another 5 minutes until they are flaky and cooked through.

Finish and Serve

Stir in the chopped cilantro and lime juice just before serving. Serve the soup hot with cooked rice and tortillas on the side.
