    Cook the Steak

    Season the skirt steak with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 3-4 minutes on each side for medium-rare. Remove from skillet and let it rest.

    Prepare the Sauce

    In the same skillet, add another tablespoon of olive oil. Sauté the diced onion and garlic until fragrant. Add the diced tomatoes, jalapeño, cumin, salt, and pepper. Simmer for about 10 minutes until the sauce thickens.

    Cook the Eggs

    In a separate pan, cook the eggs sunny-side up or to your preference.

    Assemble the Dish

    On each plate, spread a layer of black beans. Slice the rested steak and place it on top of the beans. Add the cooked eggs on top and generously spoon the sauce over everything. Serve with warmed tortillas on the side.
