    Prepare the Broth

    In a large pot, combine the whole chicken and water. Bring to a boil over high heat. Reduce the heat to medium-low and simmer for about 30 minutes.

    Add Vegetables

    Add the chopped onion and salt to the pot. Continue to simmer for another 20 minutes, or until the chicken is fully cooked and tender.

    Cook the Rice

    Remove the chicken from the pot and set it aside to cool. Strain the broth to remove the onion pieces, if desired. Add the rice to the strained broth and cook for about 15 minutes, or until the rice is tender.

    Shred the Chicken

    Once the chicken is cool enough to handle, shred the meat into bite-sized pieces, discarding the bones and skin.

    Combine Ingredients

    Return the shredded chicken to the pot, along with the chopped cilantro, lime juice, and black pepper. Stir well and let it simmer for an additional 5 minutes.

    Serve the caldo de pollo hot, garnished with additional cilantro and lime wedges, accompanied by warm corn tortillas.
