    Marinate the Meat

    In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Coat the venison and wild boar with the marinade. Cover and let it marinate in the refrigerator for at least 1 hour.

    Sear the Meat

    Heat a large skillet over medium-high heat. Remove the meat from the marinade and sear both sides for about 3-4 minutes until browned. Remove from skillet and set aside.

    Prepare the Sauce

    In the same skillet, add red wine and scrape up any browned bits from the bottom. Allow it to reduce by half before adding the vegetable broth.

    Cook the Vegetables

    Add mixed seasonal vegetables to the skillet and stir. Place the seared meat on top of the vegetables.

    Simmer

    Cover the skillet and reduce the heat to low. Allow everything to simmer for about 25-30 minutes, or until the meat is cooked to your desired doneness and the vegetables are tender.

    Serve

    Remove from heat, let rest for a few minutes, then slice the meat and serve with the vegetables and sauce.
