Prepare the Turkey Legs
Rinse the turkey legs under cold water and pat them dry with paper towels. Place them in a large mixing bowl.

Season the Legs
Drizzle olive oil over the turkey legs. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this spice mixture all over the turkey legs, ensuring they are evenly coated.

Marinate
Pour apple juice over the seasoned turkey legs and let them marinate in the refrigerator for at least 4 hours, preferably overnight.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C) and add the soaked wood chips.

Smoke the Turkey Legs
Place the marinated turkey legs in the smoker and smoke for about 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C).

Once cooked, remove the turkey legs from the smoker and let them rest for 10-15 minutes before serving.
