Preparation
- 1
Prepare the Ingredients
Start by rinsing the canned white beans under cold water and draining them. Peel and finely chop the garlic cloves. If you’re using fresh parsley, chop it finely and set it aside.
Cooking the Mackerel
- 2
Cook the Mackerel
In a skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the mackerel fillets skin-side down. Season with salt and black pepper. Cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork. Remove the fillets from the skillet and set aside.
Cooking the Beans
- 3
Sauté the Garlic and Beans
In the same skillet, add another tablespoon of olive oil. Add the chopped garlic and sauté for about 1 minute until fragrant. Then, add the rinsed white beans and cumin. Stir to combine and cook for an additional 3-4 minutes, until the beans are heated through. Season with salt and black pepper to taste.
Serving
- 4
Plate the Dish
To serve, place a generous portion of the sautéed beans on each plate. Top with the cooked mackerel fillets. Drizzle with lemon juice and garnish with fresh parsley if desired.
