Prepare the Panna Cotta

Bloom the Gelatin

In a small bowl, combine the gelatin powder with 6 tablespoons of cold water. Allow it to sit for about 5-10 minutes until it becomes gelatinous.

Heat the Cream Mixture

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar over medium heat. Stir occasionally until the sugar is dissolved and the mixture is warm but not boiling.

Add Vanilla and Gelatin

Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin mixture until fully dissolved.

Pour into Molds

Pour the panna cotta mixture into individual ramekins or molds. Allow them to cool at room temperature for about 30 minutes.

Chill

Cover the ramekins with plastic wrap and refrigerate for at least 4 hours, or until set.

Prepare the Berry Sauce

Cook the Berries

In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat, gently stirring until the berries break down and the mixture thickens slightly, about 10-15 minutes.

Cool the Sauce

Remove from heat and let the sauce cool to room temperature. You can strain it for a smoother texture if desired.

Serve

Unmold and Serve

To serve, carefully run a knife around the edge of each panna cotta to loosen it. Invert onto a plate and drizzle with the berry sauce. Enjoy your delicious panna cotta!
